A comforting Vegetarian Shepherd's Pie made with Meatless mince, tinned tomatoes, and baked beans, topped with creamy mashed potatoes and optional cheddar cheese. Bake until golden and enjoy a hearty, satisfying meal perfect for any occasion.
Ingredients:
- 2 cups Meatless Mince Mix
- 1 tin of chopped tomato (425g)
- 1 tin of baked beans (425g)
- 850g potatoes
- 100ml milk
- 1 cup grated cheddar cheese (optional)
Method:
- Preheat the oven to 200°C/180°C fan/400°F/gas 6.
- Add one and half cups of boiling water per 2 cups of mince mix.
- Stir in tinned tomatoes, and simmer of 20 minutes.
- Once the mixture has thickened stir in baked beans and set aside.
- Wash, peel and cut potatoes. Cover with boiling water and simmer for 20-30 minutes until you can easily poke through the potatoes with a fork.
- Drain the potatoes, add the milk and then mash the potatoes.
- Spoon the mince mixture into a medium sized oven dish and then place mashed potato evenly over the top, pressing down gently.
- Run a fork over the top to break up the surface, and then sprinkle with cheese.
- Bake for about 40 minutes, or until golden brown.
Hint:
- Mashed potato can be made without milk, or butter can be used.
- Sliced potatoes can be used in stead of potato mash.
- Chopped carrots, peas and other vegetables can be added to the mince mixture as desired.
- Add a little Brown, Worcestershire Sauce, Tabaco or other sauce to the mince mixture to add variety or a bit of a kick.
