Stuffed courgettes filled with a savory Meatless burger of kofta mix, optionally combined with grated cheddar cheese. Serve with salad, ciabatta, or sautéed potatoes for a delicious and nutritious meal. Versatile and perfect for various tastes.
Ingredients:
- 2 large courgettes
- 1 cup Meatless Burger Mix
- 2 cups grated cheddar cheese (optional)
Method:
- Preheat the oven to 200°C/180°C fan/400°F/gas 6.
- In a bowl mix the Meatless Burger Mix with 1 cup of water and leave to stand for 5 minutes.
- Grate 2 cups of cheddar or other mild cheese and 1 cup of cheese in to the meatless mix.
- Cut the courgettes in half length wise and using a small spoon hollow out the flesh leaving a boat shell about 1cm thick.
- For those not using cheese, mix the extracted courgette flesh with the meatless mix.
- Dry the courgette shells with kitchen paper then stuff each one generously.
- Place them in a single layer on an oiled or non-stick baking dish.
- Sprinkle the remainder of the grated cheese over the top.
- Place the courgettes in an oven dish and bake for about 40 minutes, or until golden brown.
Hints:
- Cut a small slice from the bottom of the courgette so that it sits nicely in the oven dish and your plate.
- Delicious served with a green leaf salad, toasted ciabatta or sautéed potatoes.
- Meatless Kofta mix can also be used as a stuffing.
